Take 2
oz. ground ginger; I oz, allspice; 1 —2 oz. cinnamon; 1-4
oz. cloves; all bruised or ground, boil a few minutes in 2 quarts
of molasses, strain into your keg and add 7 1-2 gals. cold water
and 1 pt. of good yeast; shake it well together and bung down, make
over night and it will be ready for use the next day. There ought
to be a little space in the keg not filled with the beer. This beer
is ahead of all the pops and mineral waters of the day, for flavor,
health, or sparkling qualities, or speed in making. Be careful you
do not burst the keg. In hot weather, draw in a pitcher with ice.
